One fine Thursday Night

As a celebration for Thursday evening which all of us are happy since Friday is off for us, we normally stay up late and of course indulge ourselves for food! We went to the mall just to send our remittances and part of it was to check if there's anything we could wear for tomorrow's activity, sad to say we didn't find anything that will suit our budget. We gave up and just went to the grocery to buy anything that will fill up our stocks. Well we end up buying food for our Midnight snack- food tripping ika nga.

Busog, lusog!

While still in the office, my mind is already wandering about what I’ll have for lunch. I only have fish in mind but I told myself I need to grab some Kangkong leaves to complete my meal. Buti na lang meron sa tindahan!

My lunch cum dinner:
- 1 medium size Sherry Fish (my favorite), already marinated with salt this morning. Deep fried till toasted.
- A bunch of Kangkong leaves, stir fried with a lot of garlic + onion then added Oyster sauce, just to suit my taste bud.
- 2 cups of rice please…=)

Go green

I prepared a very easy salad for my lunch today since I have to rush kasi makikipagchat pa ko sa hubby ko… Actually this is my favorite kind of salad, it is really an Arabic Salad called “Fattoush” which is popular in Lebanon but since there are some ingredients that I’m not used to eat, I just replaced it and created a new recipe.



Ingredients:
2 pcs of Kubus cut into small pieces and fried (till toasted) using olive oil – crunchy the better
1 pc tomato, diced
1 pc cucumber, diced
1 small pc of green bell pepper, diced
1 bunch of lettuce, cut into small pieces
1 -2 tsp of Apple cider
2-5 tsp of Olive oil
Feta Cheese

Preparation:
1.) In a large bowl, combine lettuce, tomato, cucumber, and green bell pepper. Toss gently
2.) For the dressing, in a small bowl, mix apple cider and olive oil together. Depends on your tase
3.) Pour dressing over salad and top it off with toasted kubus and feta cheese

Done! So easy isn’t it, for salad like this, you can be very inventive just try and explore!

Afternoon Delight

My housemate Yoko just love baking, it's not my thing but I want to try the "No bake - Blueberry Cheesecake" this is my favorite and want to try it one of these days...Anyways, for this afternoon we had a Chocolate cake, this was suppose to be the cake for Mae's birthday, delayed though. I forgot to take photo of her while doing this because I was busy on the net (as always).
Well for this Yoko's Chocolate Cake..courtesy of Betty Crocker Supermoist Ready Mix.

Ingredients:

1 box Betty Crocker® SuperMoist® milk chocolate cake mix
1/3 cup chocolate malted milk powder - used Evaporated milk
Water, vegetable oil and eggs as called for on cake mix box
1 cup whipping cream - we don't have this
1/4 cup chocolate malted milk powder- we don't have this either but we used Van Houten chocolate melt
1/2 teaspoon vanilla
1 cup chocolate-covered malted milk balls, if desired - nada' only sprinklers of chocolates


How to:

1.) Heat oven to 350°F (325°F for dark or nonstick pan.)
2.) In large bowl, stir together cake mix and 1 can of Evaporated Milk. Beat in water, oil and eggs with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes, scraping bowl occasionally. Pour into pan.
3.) Bake 29 to 34 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
4.) In medium bowl, melt Van Houten chocolate on medium speed until stiff peaks form. Spread over cake. Just before serving, top with sprinkled chocolate.

Birthday Treat

It’s my cousins’ birthday last Monday and she treated us in Pizza Company together with our roommates. Since I’ve been craving for pasta and pizza since last week, I’m the one who requested to dine here, hehehe! I really like the pizza and pasta here, actually this is where I got my recipe for Shrimp and Broccoli in White Sauce pasta (I’ll share the recipe one of these days). Good thing they offered a Value meal for 6 that made her bill a really affordable one. For only AED 99.00 we got 3 medium size pizzas (any of your choice), 6 bottle of Pepsi, 1 plate for the Salad Bar and 6 pcs. of Garlic bread. We just added Creamy Carbonara and 2 set of Buffalo wings for AED 68.00, a great deal for her pocket.







Well it didn’t end here, right after the dinner we went to Starbucks for cold coffee, yipeee!!!! Well I had Chocolate cream since I’m having trouble sleeping if I take it either in afternoon or evening.


Oh, well, to my cuz’ “Happy Birthday!”and thank you for the yummy treat!
